6-1C Violation of Code: [511-6-1.04(6)(d)] Marinara sauce prepped yesterday (2/21) and left overnight in the walk in cooler was recorded at 44-45 degrees F. Time and temperature of TCS foods must be cooled from 135F to 70F within 2 hours and then to 41F within a total of 6 hours. COS: Marinara sauce voluntarily discarded. Corrected On-Site. Repeat Violation. 6-1D Violation of Code: [511-6-1.04(6)(i)] Container of marinara on counter top using time as a control per CFSM has no label indicating the time the product was removed from cold holding. If desire to use time as a public health control, written procedures must be prepared in advanced, maintained in the establishment, and made available to the Health Authority upon request. Food must be marked with a verifiable method for determining discard time (4 hours or less from being removed from hot or cold holding). COS- CFSM voluntarily discarded marinara. CFSM furnished clipboard with time logs for portion of marinara containers on previous days- placing time marker on the product container itself is recommended. The used method of verification must be incorporated into the written procedure. Corrected On-Site. Repeat Violation. 8-2B Violation of Code: [511-6-1.07(6)(b)] Spray bottles of bleach stored on rack adjacent to dishmachine used for sanitizing surfaces unlabeled. Containers used for storing poisonous or toxic materials such as sanitizers shall be clearly and individually labeled with the common name of the material. COS: Contents of spray bottle were discarded. CFSM informed that for future practice of holding sanitizer in spray bottles, they must be identified with common name Corrected On-Site. New Violation.
