4-2A Violation of Code: [511-6-1.04(4)(c)1(iv)] foods in coolers and freezer not covered-to prevent possible contamination keep foods covered in storage-cos foods were covered Corrected On-Site. New Violation. Remarks: Salad bar will need shields on both sides if customers can serve foods from either side. Restaurant is ordering new shields and will recheck in 30 days. Thank you for new cooler outside of kitchen for flowers and new wall covering in prep area-looks great! A variance and HACCP Plan will be needed if restaurant is wanting to vacuum seal foods. No equipment or bags can be in restaurant that related to sealing.
