6-1A Containers of tomatoes, pico de gallo, cut leafy greens, and corn/tomato mixture held in the table top ice well ranged from 55-58 degrees Fahrenheit. Ice was only touching the bottom portion of the containers. Fully submerge the containers in ice, or submit a TAPHC policy to Hall County Environmental Health for review. COS- Items were out less than 2 hours, manager submerged containers in ice to be held at 41 degrees Fahrenheit. Corrected On-Site. Repeat Violation. 6-2 Violation of Code: [511-6-1.04(6)(g)] The following items stored in the WI cooler did not bear a date mark: cooked beef, sausage, meat sauce, chili, opened packages of pre-sliced turkey and ham. All TCS foods must be date marked and discarded within 7 days of their opening/preparation including the day the product was prepared/opened. COS- None of the items were over 4 days past their prep/open date and were given the appropriate marking. Corrected On-Site. New Violation. 15A Violation of Code: [511-6-1.05(4)(b)] Three compartment sink and warewashing tables need to be re-sealed to the wall to prevent the entrapment of water and food debris. These areas have significant mold accumulations. New Violation. 17C Violation of Code: [511-6-1.07(5)(a),(b)] Floors/walls under dishpit were heavily soiled. These areas must be cleaned frequently enough to prevent accumulations. New Violation.
