2-1B Violation of Code: [511-6-1.03(5)(c)] Observed employee load dirty utensils into the warewashing machine and then handle clean utensils for sorting and storage without first washing their hands. Employees must wash hands between switching from handling dirty utensils to clean utensils. COS- Employee washed hands and utensils re-washed. Corrected On-Site. New Violation. 2-1C Violation of Code: [511-6-1.04(4)(a)1,2,3,4(i)-(iii)] Observed waitress handle mixed greens and red onions with her bare hands when assembling a salad at the salad cooler. Observed employee plate/handle pancakes using their bare hands at the cookline. Employees must maintain no bare hand contact with ready to eat foods. Cookline employees washed hands and donned gloves. New Violation. 4-2B Violation of Code: [511-6-1.05(7)(b)] Accumulated grime debris in tea urn nozzle spouts and interior components/surfaces behind the baffle of the ice machine. Clean and sanitize tea nozzles at least every 24 hours and food contact surfaces of the ice machine frequently and thoroughly enough to keep rid of accumulations. COS- Items cleaned and sanitized. Corrected On-Site. New Violation. 4-2B Violation of Code: [511-6-1.05(7)(a)1] Food debris and residue observed on metal pans and plastic food containers stored on the clean utensil shelves in the warewashing area. Ensure the food contact surfaces of utensils are clean to sight and touch before storage or reuse. COS- Items placed staging area for dirty utensils. Corrected On-Site. New Violation. Remarks: Wash/Rinse 124F, Chlorine 100ppm Quat Wiping Buckets 300ppm Discussed storage practices for raw animal foods and ready-to-eat foods- storage poster provided.
