Violation of Code: [511-6-1.04(4)(c)] Open bags of uncooked chicken stored above prepared ready to eat bread and ham in walk-in freezer. Food shall be stacked according to minimum internal cook temperature to prevent cross contamination. COS: Items rearranged. Corrected On-Site. New Violation. 15A Violation of Code: [511-6-1.05(6)(a)] Screws on oven doors falling out so that oven doors are not shutting properly. Repair doors so that loose metal like screws do not fall into food and so equipment can be closed properly. New Violation. 17C Violation of Code: [511-6-1.07(5)(a),(b)] Floors throughout kitchen, in dish area, and storage areas with build-up of debris. Clean floors at a frequency to prevent the accumulations of dirt and food product. Repeat Violation. 17D Violation of Code: [511-6-1.07(2)(i)] Fluorescent lights in kitchen without black caps on plastic tubing to prevent bulbs from shattering onto exposed food, clean equipment, utensils, etc. Light bulbs shall be shielded so that they are shatter-resistant in food preparation and storage areas. New Violation. Remarks -Currently not using walk-in cooler because it is broken. Replacement has been ordered. Using milk cooler and freezer to store all time/temperature control for safety food.
