Violation of Code: [511-6-1.04(4)(c)] Racked shell eggs stored above open container (open bag in milk crate) of chopped onions on bottom of 2 -door cooler on front line. Store raw animal foods below and away from ready to eat foods. COS: Racks of raw shell eggs moved to bottom of cooler and container of onions moved to higher shelf. Corrected On-Site. New Violation. 4-2B Violation of Code: [511-6-1.05(6)(l)] Hot water sanitizing dishmachine final rinse temperature not reaching required 160F internal final rinse temperature - temperature started at 159F (start) and consecutive runs final rinse temperature dropped to 154F. Hot water pumped into machine at 180F must maintain at least 160F in machine during final rinse. COS: Maintenance contacted - 3-compartment sink to be used to manually sanitize dishes until dishmachine fixed. Corrected On-Site. New Violation. 8-2B Violation of Code: [511-6-1.07(6)(b)] Commercially labeled sanitizer bottles labeled as Quat filled with bleach for sanitizing dining tables and food contact surfaces behind the counter. Chemical bottles must be labeled with the correct chemical name. COS: Bottles were all labeled "Bleach". Corrected On-Site. New Violation. 12A Violation of Code: [511-6-1.04(4)(q)] Unpackaged slices of ham laying directly on package of ham. Keep foods protected from any possible contamination storing in a clean location away from any possible contamination. COS: Ham voluntarily discarded. Corrected On-Site. Repeat Violation. 14B Ice scoop stored inside Styrofoam cup inside container, but cup dirty on bottom. Store utensil in clean containers and containers that can be cleaned and sanitized or change Styrofoam cup out daily). New Violation. 15A Violation of Code: [511-6-1.05(6)(a)] Cooler under cutting board at cookline has non-potable water accumulating along bottom in the back. This water is nonpotable and should not be allowed to contact food. Keep cooler units in good repair and maintained. Repeat Violation. 15A Violation of Code: [511-6-1.05(6)(b)] Heavily scarred cutting boards. Heavily scarred no longer allows for easily cleanable surface. Need to be resurfaced or replaced. New Violation. 17B Violation of Code: [511-6-1.06(5)(o),(p)] Large amount of water accumulated under grease container in dumpster area. To prevent attraction for insects/rodents keep area dry. If drain in dumpster area, check to make sure it is not clogged. New Violation.
