Inpection Notes
6-1A Violation of Code: [511-6-1.04(6)(f)] Mushrooms 49F and sliced cheese 53F in panned ice baths held in open top cooler at grill. Foods must maintain 41F or less for cold holding. Manager voluntarily discarded foods. Corrected On-Site. Repeat Violation.
15A Violation of Code: [511-6-1.05(6)(a)] Open top cooler grill needs repaired to where it operates according to it's original function and capable of maintaining foods at 41F or less without supplementing unit with panned ice. Repeat Violation.
Remarks - The Health Authority has observed the open top cooler unit unsuccessfully maintain foods at 41F or less for the past 3 consecutive inspections. Additionally, the retro-fitted ice bath creates condensation that drips onto foods stored in the bottom portion of the cooler. When foods are not properly covered inside unit, the food becomes contaminated with non-potable water. It is critical that the unit be properly repaired or replaced.
- Discussed responsibilities of the CFSM and PIC with an emphasis on ensuring that the CFSM practices on-going training and knowledge assessments for employees designated as PIC on their absence. Information handout provided.
