3-1C Violation of Code: [511-6-1.04(3)(e)] Can of pickles in dry storage area dented/damaged along the hermetic seal to where contents are potentially exposed to adulteration or contaminates. Should compromised food package integrity be discovered, the packaged food should be either discarded or stored in a separate area designated for damaged returns. COS- Asst. Manager marked can "Dot not use" and placed can on office deck. Corrected On-Site. New Violation. 15A Violation of Code: [511-6-1.05(6)(a)] Magnetic strip used to hold knives has stained wood and rusted metal. Hammer used to insert corn cob skewers has peeling wood handle. Tabletop scale used to weigh foods has a rusted stand. Screws holding baffle of ice machine rusting. Metal base of can opener (no longer used) screwed to a prep table rusting. Metal braces holding air drying rack above 3 compartment sink rusting. Remove or replace items that have rusted or have stained, warped, or flaky wood with new material that is durable, nonabsorbent, smooth, and easily cleanable. New Violation. Remarks: - Quat dispenser 400ppm - Wash 157F, Rinse 180F, Surface 167F - Discussed Water Interruption Plan, brochure provided.
