4-2B - food-contact surfaces: cleaned & sanitized 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf) Points: 4 Corrected during inspection?: Yes Repeat: No Inspector Notes: Observed the sanitizer, in the ware-wash machine, to have a concentration of 0ppm when tested with testing kit. A chemical sanitizer used in a sanitizing solution for a manual or mechanical operation at contact times shall be used in accordance with the Environmental Protection Agency (EPA)-registered label use instructions P and shall be used as follows. A chlorine solution shall have a minimum temperature of 120F and a concentration of 50-100ppm. COS: PIC discontinued using the ware-wash machine and set-up the 4-compartment sink, during the inspection, to ensure dishes are getting cleaned/sanitized properly. A maintenance person was contacted for repair of the ware-wash machine. 4-2B - food-contact surfaces: cleaned & sanitized 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf) Points: 4 Corrected during inspection?: No Repeat: No Inspector Notes: Observe there to be a pink slime/residue on the manifold of the ice machine. Equipment food-contact surfaces and utensils shall be clean to sight and touch. PIC to drain, wash, rinse and sanitize the ice machine at COB.
