There must be a person in charge on the premises of the food service establishment at all times. The person in charge shall ensure compliance with the following: 4-2B. Food-contact surfaces: cleaned & sanitized. 12C. Wiping cloths: properly stored and used. 4-2B - food-contact surfaces: cleaned & sanitized 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf) Points: 4 Corrected during inspection?: Yes Repeat: No Inspector Notes: Observed old labels stuck to metal food containers after cleaning. Equipment food-contact surfaces and utensils shall be clean to sight and touch. Corrective Actions: Employee removed the old labels on clean equipment before washing, rinsing, and sanitizing. 12C - wiping cloths: properly used and stored 511-6-1.04(4)(m) - wiping cloths, use limitation (c) Points: 3 Corrected during inspection?: Yes Repeat: No Inspector Notes: QAC sanitizing solution not maintained clean. Dry wiping cloths and the chemical sanitizing solutions in which wet wiping cloths are held between uses shall be free of food debris and visible soil. Corrective Actions: Employee immediately poured out the sanitizing solution and obtained fresh sanitizing solution at proper concentration.
