Inspector Notes: Observed no monitoring of key drop delivery temperatures on food invoices in the establishment. 511-6-1.03(2)(a)-(n)(p),(q) - Responsibility of PIC (Pf) Monitoring of Receiving during Non-Operating Hours. Employees are verifying that foods delivered to the food service establishment during non-operating hours are from approved sources and are placed into appropriate storage locations such that they are maintained at the required temperatures, protected from contamination, unadulterated, accurately presented, by routinely monitoring the employees' observations, maintaining receiving/corrective action records for deliveries during non-operating hours and periodically evaluating foods upon their receipt as specified within DPH Rule 511-6-1-.04(3)(m). Note: The facility will need to reach out to their delivery provider, and ensure that receiving temperatures are reported on invoices to ensure monitoring of food temperatures.

Inspector Notes: Observed boneless chicken to be fully enclosed in plastic wrappings, while cooling in the reach-in cooler in the pizza prep area. When placed in cooling or cold holding equipment, food containers in which food is being cooled shall be: (i) Arranged in the equipment to provide maximum heat transfer through the container walls; and (ii) Loosely covered, or uncovered if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food. COS: The PIC immediately opened the boneless chicken up to allow for adequate cooling and maximum heat transfer. Also, the boneless chicken was moved to walk-in cooler to rapidly cool down.

Receptacles and waste handling units for refuse, recyclables, and returnables shall be kept covered: 2. With tight-fitting lids or doors if kept outside the food service establishment. COS: The PIC immediately closed the side doors to ensure refuse is covered.
