Inspector Notes: Observed employee to not be wearing gloves during while cutting/prepping ready-to-eat foods. Except when washing fruits and vegetables or as specified under subsection (a)4, food employees shall not contact exposed, ready-to-eat food with their bare hands and shall use suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment. COS: PIC voluntarily informed employee that they need to wear gloves at all times, during food preparation.

Working containers used for storing poisonous or toxic materials such as cleaners and sanitizers taken from bulk supplies shall be clearly and individually identified with the common name of the material. COS: PIC voluntarily labeled spray bottles during the inspection.

Inspector Notes: Observed a sanitizer bucket, made with chlorine, to have a reading of >100ppm, when tested with testing strips. Chemical sanitizers, including chemical sanitizing solutions generated on-site, and other chemical antimicrobials applied to food-contact surfaces shall: 1. Meet requirements specified in 40 CFR 180.940 Tolerance exemptions for active and inert ingredients for use in antimicrobial formulations (Food-contact surface sanitizing solutions). COS: PIC remade sanitizer, during the inspection, and the concentration read 50-100pm when tested.

Inspector Notes: Observed employees prepping and preparing food while not wearing and approved method of hair restraint. Employees preparing or handling food shall use effective and clean, disposable or easily cleanable nets or other hair restraints approved by the Health Authority, worn properly to restrain loose hair including beards and mustaches longer than one half inch. COS: PIC voluntarily placed a hair restraint on during the inspection.
