4-2B - food-contact surfaces: cleaned & sanitized 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf) Points: 4 Corrected during inspection?: No Repeat: No Inspector Notes: Observed there to be an accumulation of pink slime inside the ice machine. Equipment food-contact surfaces and utensils shall be clean to sight and touch. PIC voluntarily turned the ice machine off to allow the ice to drain before having to clean it, which will happen at COB. 12C - wiping cloths: properly used and stored 511-6-1.04(4)(m) - wiping cloths, use limitation (c) Points: 3 Corrected during inspection?: Yes Repeat: No Inspector Notes: Observed all sanitizer buckets to have a concentration of 0ppm when tested. Employee had connected rinse aid, instead of sanitizer, to the connection hose. Cloths in-use for wiping food spills from tableware and carry-out containers that occur as food is being served shall be cloths in-use for wiping counters and other equipment surfaces shall be held between uses in a chemical sanitizer solution at a concentration of 50-100ppm (chlorine) and 200-400ppm (quaternary ammonium. COS: PIC manually prepared a sanitizer in the 3-comaprtment sink and the concentration read 200-400ppm when tested.
