Observed to be over 60 pounds per square inch. 511-6-1.05(6)(m) - Mechanical Warewashing, Sanitization Pressure(C): Mechanical Warewashing Equipment, Sanitization Pressure. The flow pressure of the fresh hot water sanitizing rinse in a warewashing machine shall be within the range specified on the machine manufacturer’s data plate and may not be less than 35 kilopascals (5 pounds per square inch) or more than 200 kilopascals (30 pounds per square inch). Note: The PIC will have maintenance come and repair the issue.

Inspector Notes: Observed the (3)-compartment sink, the mop sink, and the prep sink to not reach a minimum water temperature of 110F. 511-6-1.06(1)(g),(h) - Water Supply, Capacity; Pressure (Pf). Hot water generation and distribution systems shall be sufficient to meet the peak hot water demands throughout the food service establishment. Note: The facility has maintenance working on repairing the water temperatures in the building. The facility will not be operating until the water temperature is restored.
