2-2D - adequate handwashing facilities supplied & accessible 511-6-1.07(3)(b) - hand drying provision (pf) Points: 4 Corrected during inspection?: Yes Repeat: No Inspector Notes: Observed no drying provisions at the hand sink by the restrooms. 511-6-1.07(3)(b) - Hand Drying Provision (Pf) (b) Hand Drying Provision. Each handwashing sink or group of adjacent handwashing sinks shall be provided with: 1. Individual, disposable towels; Pf 2. A continuous towel system that supplies the user with a clean towel; Pf 3. A heated-air hand drying device; Pf or 4. (a) Handwashing Cleanser, Availability. Each handwashing sink or group of two adjacent handwashing sinks shall be provided with a supply of hand cleaning liquid, powder, or bar soap. Pf COS: The PIC immediately got liquid hand soap in the men's restroom to ensure food employee's can properly wash their hands. 11A - proper cooling methods used: adequate equipment for temperature control 511-6-1.04(6)(e) - cooling methods (pf, c) Points: 3 Corrected during inspection?: Yes Repeat: No Inspector Notes: Observed several containers of cooked cabbage and cooked pork to be fully covered, while cooling in the walk-in cooler. 511-6-1.04(6)(e) - Cooling Methods (Pf, C) (e) Cooling Methods. 1. Cooling shall be accomplished in accordance with the time and temperature criteria specified under DPH Rule 511-6-1-.04(6)(d) by using one or more of the following methods depending on the type of food being cooled: (i) Placing the food in shallow pans; Pf (ii) Separating the food into smaller or thinner portions; Pf (iii) Using rapid cooling equipment; Pf (iv) Stirring the food in a container placed in an ice water bath; Pf (v) Using containers that facilitate heat transfer; Pf (vi) Adding ice as an ingredient; Pf or (vii) Other effective methods. Pf 2. When placed in cooling or cold holding equipment, food containers in which food is being cooled shall be: (i) Arranged in the equipment to provide maximum heat transfer through the container walls; and (ii) Loosely covered, or uncovered if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food. COS: The PIC immediately uncovered the food items to ensure proper cooling times in accordance with DPH rules. 16A - hot and cold water available; adequate pressure 511-6-1.06(1)(g),(h) - water supply, capacity; pressure (pf) Points: 2 Corrected during inspection?: No Repeat: No Inspector Notes: Observed the mop sink to not meet required minimum temperatures of 110F. 511-6-1.06(1)(g),(h) - Water Supply, Capacity; Pressure (Pf) (g) Capacity. Hot water generation and distribution systems shall be sufficient to meet the peak hot water demands throughout the food service establishment. Note: The PIC will us hot water from the (3)-compartment sink and have the mop sink repaired. 16B - plumbing installed; proper backflow devices 511-6-1.06(2)(d) - backflow prevention, air gap (p) Points: 2 Corrected during inspection?: No Repeat: No Inspector Notes: Observed no 1 inch air gap between the (3)-compartment sink and the flood level rim of the plumbing fixture. 511-6-1.06(2)(d) - Backflow Prevention, Air Gap (P) (d) Backflow Prevention, Air Gap. An air gap between the water supply inlet and the flood level rim of the plumbing fixture, equipment or nonfood equipment shall be at least twice the diameter of the water supply inlet and may not be less than 1 inch (25 mm). P Note: The PIC will have someone come out and repair this to allow for an air gap. 17B - garbage/refuse properly disposed; facilities maintained 511-6-1.06(5)(b) - outdoor storage surface, constructed of nonabsorbent material & sloped to drain (c) Points: 1 Corrected during inspection?: No Repeat: No Inspector Notes: Observed the dumpster to be stored on dirt and not stored on a smooth, durable surface. 511-6-1.06(5)(b) - Outdoor Storage Surface, constructed of nonabsorbent material & sloped to drain (C) (b) Outdoor Storage Surface. An outdoor storage surface for refuse, recyclables, and returnables shall be constructed of nonabsorbent material such as concrete or asphalt and shall be smooth, durable, and sloped enough to drain to prevent the collection of surface water. Note: The PIC will need to have this area repaired or moved to an area where the outside surface is nonabsorbent. 17B - garbage/refuse properly disposed; facilities maintained 511-6-1.06(5)(n) - covering receptacles (c) Points: 1 Corrected during inspection?: Yes Repeat: No Inspector Notes: Observed the outside dumpster to not have the side doors closed. 511-6-1.06(5)(n) - Covering Receptacles (C) (n) Covering Receptacles. Receptacles and waste handling units for refuse, recyclables, and returnables shall be kept covered: 1. Inside the food service establishment if the receptacles and units: (i) Contain food residue and are not in continuous use; or (ii) After they are filled; and 2. With tight-fitting lids or doors if kept outside the food service establishment. Except as specified in paragraph 2 of this subsection, receptacles and waste handling units for refuse, recyclables, and returnables and for use with materials containing food residue shall be durable, cleanable, insect- and rodent-resistant, leakproof, and nonabsorbent. Note: The facility will need to enclose the dumpster to ensure it is insect and rodent resistant.
