QAC sanitizing solution shall be available at a concentration between 150-200 ppm. Corrective Actions: Food employee was educated by EHS on the importance of having sanitizing solution readily available during service to sanitize food contact surfaces between uses. 12B - personal cleanliness 511-6-1.03(5)(i) - hair restraints (c) Points: 3 Corrected during inspection?: No Repeat: No Inspector Notes: Observed food employee involved in handling food without a hair restraint. Hair Restraints. Employees preparing or handling food shall use effective and clean, disposable or easily cleanable nets or other hair restraints approved by the Health Authority, worn properly to restrain loose hair including beards and mustaches longer than one half inch. Corrective Actions: Food employee was informed by EHS to wear a hair restraint when involved with food handling. 12B - personal cleanliness 511-6-1.03(5)(g) - jewelry (c) Points: 3 Corrected during inspection?: No Repeat: No Inspector Notes: See inspection report for permit #FSP-069-000285. 14A - in-use utensils: properly stored 511-6-1.04(4)(k) - in-use utensils, between-use storage (c) Points: 1 Corrected during inspection?: No Repeat: No Inspector Notes: Observed ice cream scoops stored in water below 135°F. Storage of In-Use Utensils. During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored: In a container of water if the water is maintained at a temperature of at least 135°F (57°C) and the container is cleaned at a frequency specified under DPH Rule 511-6-1-.05(7)(b)3(vi). Corrective Actions: EHS recommended that the facility be provided with more scoops to ensure there are enough scoops for all flavors of ice cream. Current scoops were replaced.
