Authorized Personnel Access. Persons unnecessary to the food service establishment operation are not allowed in the food preparation, food storage, or warewashing areas, except that brief visits and tours may be authorized by the person in charge if steps are taken to ensure that exposed food; clean equipment, utensils, and linens; and unwrapped single-service and single-use articles are protected from contamination. Corrective Actions: PIC was educated by EHS to ensure unauthorized personnel are not allowed where food service operations occur in the establishment. 1-2B - certified food protection manager 511-6-1.03(3)(a) - food safety manager certification (pf) Points: 4 Corrected during inspection?: No Repeat: No Inspector Notes: Observed the posted ServSafe certificate to belong to someone who no longer is employed by the facility. No other employees present observed to be CFSM. Food service establishments shall have in its employ a Certified Food Safety Manager (CFSM) as specified in paragraph (b) of this subsection to ensure food safety is being managed within the food service establishment during all hours of operation as specified within paragraph (d) of this subsection. Corrective Actions: PIC was informed by EHS to obtain CFSM within 60 days. 3-1C - food in good condition, safe, and unadulterated 511-6-1.04(1) - safe, unadulterated and honestly presented (p) Points: 9 Corrected during inspection?: Yes Repeat: No Inspector Notes: Observed a carton of strawberries to have heavy mold growth in the reach-in cooler. Condition. Food shall be safe, unadulterated, and honestly presented. Corrective Actions: PIC voluntarily discarded the strawberries. 14A - in-use utensils: properly stored 511-6-1.04(4)(k) - in-use utensils, between-use storage (c) Points: 1 Corrected during inspection?: Yes Repeat: No Inspector Notes: Observed several containers with ice cream scoops stored in water with a temperature of 70°F-77°F. Storage of In-Use Utensils. During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored: In a container of water if the water is maintained at a temperature of at least 135°F (57°C) and the container is cleaned at a frequency specified under DPH Rule 511-6-1-.05(7)(b)3(vi). Corrective Actions: PIC voluntarily obtained replacement scoops stored in empty, dry containers. 17A - toilet facilities: properly constructed, supplied, cleaned 511-6-1.06(5)(h) - toilet room receptacle, covered (c) Points: 1 Corrected during inspection?: No Repeat: No Inspector Notes: Observed no lid on trach can in unisex employee restroom. Toilet Room Receptacle, Covered. A toilet room used by females shall be provided with a covered receptacle for sanitary napkins. Corrective Actions: PIC stated a lid will be obtained for the trashcan.
