Inspector Notes: Observed the gaskets on the reach in cooler to have soil accumulation for all reach in coolers in the facility. Equipment food-contact surfaces and utensils shall be clean to sight and touch. COS: The PIC will wash, rinse, and sanitize the gaskets by the end of the day to ensure compliance with clean food contact surfaces. The PIC was educated on the importance of maintaining food contact surface cleanliness.

Inspector Notes: Observed the long white cutting board on one of the reach in coolers to be in disrepair. Surfaces such as cutting blocks and boards that are subject to scratching and scoring shall be resurfaced if they can no longer be effectively cleaned and sanitized, or discarded if they cannot be resurfaced. Note: The PIC will immediately get a replacement cutting board or resurface the current one.
