Based on the risk of foodborne illness inherent to the food service operation, during inspections and upon request, the person in charge shall demonstrate to the Health Authority knowledge of foodborne disease prevention, application of the Hazard Analysis Critical Control Point principles, and the requirements of this Chapter. The person in charge shall demonstrate this knowledge in one of the following ways: (a) Compliance with Chapter. Complying with this Chapter by having no violations of Priority Items during the current inspection. Corrective Actions: PIC will ensure all items are addressed and corrected by the next routine inspection.

Inspector Notes: Observed hand sink in women's restroom to reach peak temperature of 80°F with time. A handwashing sink shall be equipped to provide tempered water at a temperature of at least 85ºF (29.4 ºC) through a mixing valve or combination faucet. Corrective Actions: PIC voluntarily closed access to single-occupant women's restroom and placed sign on single-occupant men's restroom to act as a temporary unisex single-occupant restroom until water at proper temperature can be restored to women's restroom.

Inspector Notes: **First Consecutive Repeat Violation** Observed facility to not have a disinfectant effective against Norovirus in the food establishment. A food establishment shall have procedures for employees to follow when responding to vomiting or diarrheal events that involve the discharge of vomitus or fecal matter onto surfaces in the food service establishment. The procedures shall address the specific actions employees must take to minimize the spread of contamination and the exposure of employees, consumers, food, and surfaces to vomitus or fecal matter. Corrective Actions: PIC stated bleach with >5.25% sodium hypochlorite will be purchased and stored secure location.

Inspector Notes: Observed unlabeled spray bottle stored in front food service area. PIC stated the contents of the spray bottle was plain water. Working containers used for storing poisonous or toxic materials such as cleaners and sanitizers taken from bulk supplies shall be clearly and individually identified with the common name of the material. Corrective Actions: PIC labeled spray bottle as "water".

Inspector Notes: Observed toxic item (Goo Gone) on premise that is not required for the operation of establishment. Only those poisonous or toxic materials that are required for the operation and maintenance of the food service establishment, such as for the cleaning and sanitizing of equipment and utensils, and the control of insects and rodents shall be allowed in a food service establishment. Corrective Actions: PIC stated the "Goo Gone" was not supposed to be in the establishment and voluntarily discarded the bottle.

Inspector Notes: Observed mop stored in mop sink basin preventing air-drying between uses. After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies. Corrective Actions: PIC stored mop on wall mount to allow air-drying.
