Inspector Notes: Observed a server take a sanitization rag and rinse it out in the hand sink, then the server used that rag to wipe up the salad buffet bar where the facility keeps both temperature based items and time based items. No sanitization was done before using the area again. 511-6-1.05(8)(a) - Before use after Cleaning(P) (8) Sanitization of Equipment and Utensils. (a) Before Use After Cleaning. Utensils and food-contact surfaces of equipment shall be sanitized before use after cleaning. P COS: The manager immediately sanitized the area to prevent contamination of food products and RTE foods.

Inspector Notes: Observed a sauce being prepped and stirred in a metal container on top of an open container of broccoli. The container had no handle, indicating that it may have been touched by bare hands or other environmental contamination sources. 511-6-1.04(4)(t) - Food Preparation (C) (t) Food Preparation. During preparation, unpackaged food shall be protected from environmental sources of contamination. COS: The container was immediately removed from top of broccoli during inspection.
