Inspector Notes: Observed cut lettuce and sliced sausage to be cooling in the walk in cooler while being tightly/fully covered. Loosely covered, or uncovered if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food. Note: PIC voluntarily uncovered the containers of lettuce and sausage, so that they may cool properly.
