Inspector Notes: Observed sliced turkey, ham, and pasta salad to be in cooling process but were tightly covered with lids and plastic wrap. Loosely covered, or uncovered if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food. Note: PIC voluntarily uncovered both the deli meats and pasta salad, so that they may cool properly.

Inspector Notes: Observed several gaskets located at the reach in coolers to have a build-up of food debris. Nonfood-Contact Surfaces. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Note: PIC will have all gaskets throughout the facility cleaned and free of debris at COB.
