Inspector Notes: Observed both hand sinks located in the front food service area to have ice dumped into them. Observed employee dumping bleach with a rag into the hand sink located in the main kitchen by the walk in cooler. A handwashing facility may not be used for purposes other than handwashing. COS: PIC verbally counseled the employee on proper use of the hand sink.

Inspector Notes: Observed batter with buttermilk to be in the cooling process while fully covered. Loosely covered, or uncovered if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food. Note: PIC voluntarily had batter uncovered during in the inspection so that it would cool properly.

Inspector Notes: Observed the wash cycle gage to not be registered the wash cycle temperature. In hot water mechanical warewashing operations, an irreversible registering temperature indicator shall be provided and readily accessible for measuring the utensil surface temperature. Note: PIC will call appropriate personnel to come and have gage repaired.

Inspector Notes: Observed gaskets on the reach in cooler located at the front food service area to have a build-up of food debris. Nonfood-Contact Surfaces. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Note: PIC to clean gaskets at COB, so that they are free of any food debris.

Inspector Notes: Observed the air ducts in the main kitchen and walk in cooler to be leaking. Observed the hot water, to the meat prep sink, to be leaking when not in use. Good Repair. All physical facilities shall be maintained in good repair. Note: PIC will contact appropriate personnel to come and have air ducts and prep sink repaired.

Areas designated for employees to eat, drink, and use tobacco shall be located so that food, equipment, linens, and single-service and single-use articles are protected from contamination. Note: PIC voluntarily moved both the red bull and vitamin water in a designated area for employees.
