10D - food properly labeled; original container 511-6-1.04(7)(c) - food labels (pf, c) Points: 3 Corrected during inspection?: Yes Repeat: No Inspector Notes: Observed working containers of food that were removed from original container and stored near grill not identified by common name. Food packaged in a food service establishment, shall be labeled as specified in law, including 21 CFR 101- Food labeling, and 9 CFR 317 Labeling, marking devices, and containers. Label information shall include: The common name of the food, or if there is no common name, an adequately descriptive identity statement. Corrective Actions: PIC instructed employee to label containers of food with common name. 14B - utensils, equipment and linens: properly stored, dried, handled 511-6-1.05(10)(a) - equipment & utensils, air-drying required (c) Points: 1 Corrected during inspection?: Yes Repeat: No Inspector Notes: Observed equipment not being air-dried or adequately drained after cleaning. Several stacks of food containers were stacked wet. After cleaning and sanitizing, equipment and utensils: Shall be air-dried or used after adequate draining before contact with food. Corrective Actions: PIC arranged equipment so that proper air-drying will occur. 14C - single-use/single-service articles: properly stored, used 511-6-1.05(10)(e)1&3 - single-service/single-use items stored 6" off floor in clean, dry location (c) Points: 1 Corrected during inspection?: Yes Repeat: No Inspector Notes: Single service articles are not being kept in the original protective package or are not being stored by using other means that afford protection form contamination until they are used. Single-service and single-use articles shall be kept in the original protective package or stored by using other means that afford protection from contamination until used. Corrective Actions: Employee immediately turned single-use articles so that they are protected from contamination. 16B - plumbing installed; proper backflow devices 511-6-1.06(2)(r) - system maintained in good repair (p, c) Points: 2 Corrected during inspection?: No Repeat: No Inspector Notes: Observed pre-rinse sprayer to be leaking when in use. A plumbing system shall be repaired according to law; P and maintained in good repair. Corrective Actions: PIC stated hose for pre-rinse sprayer will be replaced. 17B - garbage/refuse properly disposed; facilities maintained 511-6-1.06(5)(n) - covering receptacles (c) Points: 1 Corrected during inspection?: Yes Repeat: No Inspector Notes: Observed dumpster lid open. Receptacles and waste handling units for refuse, recyclables, and returnables shall be kept covered: With tight-fitting lids or doors if kept outside the food service establishment. Corrective Actions: PIC instructed employee to close lid to dumpster. 17C - physical facilities installed, maintained, and clean 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c) Points: 1 Corrected during inspection?: No Repeat: No Inspector Notes: Observed reach-in cooler gaskets to have accumulation of food debris and to be torn/in disrepair. All physical facilities shall be maintained in good repair. (b) Cleaning, Frequency and Restrictions. 1. The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products. Corrective Actions: PIC stated new gaskets will be ordered.
