2-2E - response procedures for vomiting & diarrheal events 511-6-1.03(6) - clean-up of vomiting and diarrheal events(pf) Points: 4 Corrected during inspection?: No Repeat: No Inspector Notes: Observed facility to have bleach with 3.0% sodium hypochlorite, which is not effective against Norovirus. Responding To Contamination Events. A food establishment shall have procedures for employees to follow when responding to vomiting or diarrheal events that involve the discharge of vomitus or fecal matter onto surfaces in the food service establishment. The procedures shall address the specific actions employees must take to minimize the spread of contamination and the exposure of employees, consumers, food, and surfaces to vomitus or fecal matter. Note: PIC to go and purchase a chemical effective against Norovirus; bleach with 6.0% sodium hypochlorite. 4-2B - food-contact surfaces: cleaned & sanitized 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c) Points: 4 Corrected during inspection?: No Repeat: No Inspector Notes: Observed ice machine to have an accumulation of mold like substance near chute area. Equipment food-contact surfaces and utensils shall be cleaned: In equipment such as ice bins and beverage dispensing nozzles and enclosed components of equipment such as ice makers, cooking oil storage tanks and distribution lines, beverage and syrup dispensing lines or tubes, coffee bean grinders, and water vending equipment: (I) At a frequency specified by the manufacturer; or (II) Absent manufacturer specifications, at a frequency necessary to preclude accumulation of soil or mold. Note: PIC stated they will drain, wash, rinse, and sanitize ice machine at COB. 15C - nonfood-contact surfaces clean 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c) Points: 1 Corrected during inspection?: No Repeat: Yes Inspector Notes: Observed gaskets to the reach-in coolers and walk in cooler to have a build-up of food debris. Observed caulking of the 3-compartment sink to have a build up of black mold-like substance. Nonfood-Contact Surfaces. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Note: PIC stated they are planning to get them cleaned and replaced.
