Violation of Code: [511-6-1.04(6)(c)] Observed fully thawed grouper, in walk-in cooler, to still be in ROP state. Reduced oxygen packaged fish that bears a label indicating that it is to be kept frozen until time of use shall be removed from the reduced oxygen environment: (i) Prior to its thawing under refrigeration that maintains the food temperature at 41°F (5°C) or less. COS: PIC voluntarily removed fish from packaging and verbally counseled employees on proper thawing procedures for ROP food items. Corrected On-Site. New Violation. 17C Violation of Code: [511-6-1.07(5)(a),(b)] Observed several gaskets, 2 reach-in coolers in main kitchen and 2 reach-in coolers in event hall kitchen, to be broken. All physical facilities shall be maintained in good repair. PIC put in a work order, for the replacement of the gaskets, during the inspection. New Violation. Correct By: 07/12/2024
