Violation of Code: [511-6-1.05(8)(a)] Observed food containers not completely submerged in sanitizer before air drying. 511-6-1.05(8)(a) - Before use after Cleaning(P) (8) Sanitization of Equipment and Utensils. (a) Before Use After Cleaning. Utensils and food-contact surfaces of equipment shall be sanitized before use after cleaning. Note: PIC drained sanitizer compartment and refilled to properly sanitize food containers. Corrected On-Site. New Violation. 4-2B Violation of Code: [511-6-1.05(7)(a)1] Observed buildup of mold-like substance in the interior of ice machine. Equipment food-contact surfaces and utensils shall be clean to sight and touch. Pf. Note: PIC will drain and wash, rinse, and sanitize ice machine at COB. New Violation. 4-2B Violation of Code: [511-6-1.05(6)(n)] Observed QAC solution at 0ppm in the sanitizer bucket located at the front food service area. QAC solution shall have a minimum concentration of 200ppm. Note: PIC remade sanitizer solution during inspection and was retested containing a QAC concentration of 200ppm. Corrected On-Site. New Violation. 12B Violation of Code: [511-6-1.03(5)(i)] Observed two food employees to not be wearing a hair restraint during inspection. 511-6-1.03(5)(i) - Hair Restraints (C) (i) Hair Restraints. 1. Employees preparing or handling food shall use effective and clean, disposable or easily cleanable nets or other hair restraints approved by the Health Authority, worn properly to restrain loose hair including beards and mustaches longer than one half inch. Note: PIC immediately had food employees place on a hair restraint during the inspection. Corrected On-Site. New Violation. 15C Violation of Code: [511-6-1.05(7)(d)] Observed a buildup of mold-like substance to be on the caulking of what PIC named as pre-rinse sink in the front food service area. 511-6-1.05(7)(d) - Nonfood-Contact Surfaces (C) (d) Nonfood-Contact Surfaces. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Note: PIC will have sink cleaned and sanitized at COB. New Violation.
