Violation of Code: [511-6-1.05(6)(n)] Observed no sanitizer available for use on food contact surfaces upon arrival to facility. Sanitizer at proper concentration should be available and used to sanitize food contact surfaces between uses. Chlorine sanitizer should have a concentration between 50-100 ppm. Note: PIC made chlorine sanitizing solution immediately at proper concentration. Corrected On-Site. New Violation. 8-2B Violation of Code: [511-6-1.07(6)(c)] Observed antifreeze stored above and next to food and single-service items. Locating the poisonous or toxic materials in an area that is not above food, equipment, utensils, linens, and single-service or single-use articles. This requirement does not apply to equipment and utensil cleaners and sanitizers that are stored in warewashing areas for availability and convenience if the materials are stored to prevent contamination of food, equipment, utensils, linens, and single-service and single-use articles. Note: PIC immediately relocated the toxic chemical. Corrected On-Site. New Violation. 16A Violation of Code: [511-6-1.06(1)(g),(h)] Observed mop sink to not have hot water. The cold water pressure in the mop sink was also very weak. Hot water generation and distribution systems shall be sufficient to meet the peak hot water demands throughout the food service establishment. Note: PIC will have mop sink repaired. New Violation. Remarks Hand Sink - 114F and 121F Restroom Hand Sink - 110F 3-Compartment Sink - 154F Prep Sink - 134F Mop Sink - No Hot Water Available* Facility did not have any sanitizer generated upon arrival. Once PIC generated chlorine sanitizer, the concentration was 100 ppm. Facility has access to bleach with 7.55% sodium hypochlorite, effective against Norovirus.
