Observed a dish machine operating with final rinse temperatures ranging between 110F and 118F. According to the manufacturing recommendations, the system should have a final rinse temperature of 120F and have a chlorine sanitizing reading of 100ppm in order for all dishes and utensils to be sanitized.
COS: PIC is to use the 3-compartment sink until the dish machine is operating correctly and follow-up with the company who installed the dish machine. Corrected On-Site. New Violation.
Violation of Code: [511-6-1.02(1)(d)] Observed most recent inspection behind a drink cooler behind the bar. The most current inspection report shall be prominently displayed in public view at all times, within fifteen feet of the front or primary public door and between five feet and seven feet from the floor and in an area where it can be read at a distance of one foot away.
COS: PIC placed the most recent inspection where the public can see it. New Violation.
