The new, $45 million dollar plant will be on a site adjoining the company's existing plant on Monroe Drive.
Fieldale President Tom Hensley said the new plant is expected to generate 200 new jobs. It will operate 16 hours a day, with a third shift devoted to cleaning and preparation for the next day, Hensley said.
The plant's products will include chicken breasts, nuggets, filets and tenders for chains including Denny's, Applebee's, Waffle House and Arby's.
The new plant will take chicken prepared at the adjoining plant and send it through a flash fryer, which will cook the breading onto the meat. The product is then frozen and packaged.
Fieldale is currently outsourcing that production to other companies outside Gainesville.
The company also operates processing plants in Murrayville and Cornelia.
