Violation of Code: [511-6-1.07(6)(g)] Observed Quaternary Ammonia Sanitizer at the (3) compartment with a concentration more than 400ppm with a temperature of 108 Degrees Fahrenheit. Ensure that the concentration of quaternary Ammonia is between 150 - 400ppm with a solution water temperature of between 65-75 Degrees Fahrenheit according to the manufacturer's recommendation. PIC diluted the sanitizer to a concentration of between 150 - 400ppm with a temperature of between 150 - 400ppm during the inspection. New Violation. cos Note: PIC called up Ecolab to re-calibrate the sanitizer dispensing unit. Note: PIC has ordered a Sneeze Guard for the buffet line which is being built. New Violation.
