Inpection Notes

Violation of Code: [511-6-1.04(6)(e)] Observed covered plastic bus style containers being used to cool beans and Brunswick stew. The thick nature of beans and Brunswick stew, the volume of the tubs, and leaving the foods covered do not allow for proper cooling technique. COS: PIC removed beans and Brunswick stew and transferred them to uncovered shallower metal pans. Foods were observed cooling properly (see log). PIC states both beans and Brunswick stew started cooling at 11:00AM.
