Violation of Code: [511-6-1.04(6)(f)] Observed burgers being hot held on the grill at 101F. The burgers are held on the grill and then heated up to serve. Time/temperature controlled for safety foods must be hot held at 135F or higher. COS: PIC had just finished cooking burgers 10 minutes prior to inspection. PIC reheated burgers to above 165 for hot holding. Discussed with pic the need to get metal lids for the pans on the grill rather than using foil as the lids will help keep foods held on grill hotter. Corrected On-Site. New Violation.
