Violation of Code: [511-6-1.04(6)(f)] Observed fruit medley with cut melon and coleslaw in front food service area cold holding at temperatures exceeding 41F (see log). TCS food must be cold held at or below 41F. PIC stated that establishment preps these items and then stores them for service immediately without allowing them to cool to 41F. PIC informed that food must be given appropriate time to cool to 41F prior to offering them for consumption. COS: Items were prepped 30 min prior to observation and placed in freezer to cool quickly to 41F. Corrected On-Site. New Violation.
