Violation of Code: [511-6-1.04(4)(c)1(iv)] Observed all food items, located on the steam table, to be uncovered. Storing the food in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled if protected from overhead contamination. COS: PIC voluntarily covered food items during inspection. Corrected On-Site. New Violation. 4-2B Violation of Code: [511-6-1.05(6)(n)] Observed quaternary ammonium solution in the 3-compartment sink to be at a temperature of 97F. The poster from the manufacturer stated that the water be between 65F-75F. A quaternary ammonium compound solution shall have a minimum temperature of 75ºF (24ºC). PIC voluntarily added cold water to solution and the temperature reached 75F, during inspection. Corrected On-Site. New Violation. 4-2B Violation of Code: [511-6-1.05(7)(a)1] Observed black residue inside of the ice machine. Equipment food-contact surfaces and utensils shall be clean to sight and touch. PIC to drain, wash, rinse and sanitize ice machine at end of shift. New Violation. Correct By: 04/19/2023
