B Violation of Code: [511-6-1.05(6)(n)] Observed sanitizing tray with 0-100 ppm of QAC. A Quaternary ammonium sanitizing concentration must be between 200-400 ppm. COS: PIC remade sanitizer to a concentration of 200-300 ppm. Corrected On-Site. New Violation. 6-1A Violation of Code: [511-6-1.04(6)(f)] Observed multiple TCS items cold holding on a counter and in reach in coolers with temperatures greater than 41F. (see log.) Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below. COS: PIC was encouraged to discard out of temperature items. Corrected On-Site. New Violation.
