Violation of Code: [511-6-1.03(2)(a)-(l)(n)(o)] PIC failed in their duties to monitor cold and hot holding, food contact surfaces, accessibility to hand washing units and covering of foods. There must be a person in charge on the premises of the food service establishment at all times. The person in charge shall ensure compliance with food safety training. COS: PIC was educated on all said observations during inspection. Corrected On-Site. New Violation. 2-2D Violation of Code: [511-6-1.06(2)(o)] Observed a knife sharpener and rice-like debris in main kitchen employee handwash sink. A handwashing sink shall be maintained so that it is accessible at all times for employee use. A handwashing facility may not be used for purposes other than handwashing. COS: items were removed from sink. Corrected On-Site. New Violation. 4-2A Violation of Code: [511-6-1.04(4)(c)1(iv)] Observed soy sauce, garlic paste, and other ingredients being stored on cart next to grill uncovered while not in use. Observed foods cold holding in 3 Door standing coolers failing to be covered. Except as specified under paragraph 2. of this subsection and when cooling as specified in DPH Rule 511-6-1-.04(6)(e)2.(ii) food shall be stored in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled if protected from overhead contamination; COS: employees wrapped all uncovered items. Corrected On-Site. New Violation. 4-2B Violation of Code: [511-6-1.05(7)(a)1] Observed front food service soda machine nozzles to have an accumulation of debris. Equipment of food contact surfaces shall be clean to sight and touch. Facility must properly clean and sanitize nozzles by COB. New Violation. Correct By: 07/13/2022 6-1A Violation of Code: [511-6-1.04(6)(f)] Observed raw chicken and fried cream cheese crab Rangoon prepped at least one day before cold holding on counters at 47F and 74F. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C). COS: PIC was encouraged to voluntarily discard items and move eligible items to cold holding units. Corrected On-Site. New Violation. 6-1B Violation of Code: [511-6-1.04(6)(f)] Observed fried chicken hot holding on a main kitchen counter at 120 degrees Fahrenheit, chicken was not in cooling process. PIC stated employees grab from fried chicken pan and re-fry chicken upon new orders. COS: PIC was educated on properly handling Time/Temperature controlled foods and was encouraged to voluntarily reheat chicken to a temperature of at least 165 degrees Fahrenheit. Corrected On-Site. New Violation. 14A Violation of Code: [511-6-1.04(4)(k)] Observed a pair of kitchen scissors being stored handle-down in chicken. During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored: 1. Except as specified under paragraph 2 of this subsection, in the food with their handles above the top of the food and the container. COS: PIC voluntarily removed scissors. Food requires a cook step. Refuse, recyclables, and returnables shall be stored in receptacles or waste handling units so that they are inaccessible to insects and rodents. COS: PIC properly discarded items. Corrected On-Site. New Violation. 17C Violation of Code: [511-6-1.07(5)(a),(b)] Observed faucet on front food service employee hand wash sink to be detached and improperly installed.
