Violation of Code: [511-6-1.03(5)(c)] Observed an employee frying chicken with gloves, an item fell on the floor. The cook picked the item up from the floor then proceeded to cook, failing to wash their hands and change their gloves. Food employees shall clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils and: After handling soiled equipment or utensils, Before donning gloves to initiate a task that involves working with food and After engaging in other activities that contaminate the hands. COS: Inspector informed PIC of said violation and the PIC immediately directed employee to wash hands and change gloves before returning back to the fryer. Corrected On-Site. New Violation. 8-2B Violation of Code: [511-6-1.07(6)(g)] Observed sanitizing buckets to have a concentration of greater than 100 ppm of Chlorine solution. Manufacturer test strips in facility has a standard of 50-100 ppm of Chlorine solution. Poisonous or toxic materials shall be used according to: Manufacturer's use directions included in labeling. COS: PIC remade sanitizer solution to have a concentration of 50-100 ppm of Chlorine solution. Corrected On-Site. New Violation. 11A Violation of Code: [511-6-1.04(6)(e)] Observed cooling methods and storage to be inadequate for rapid cooling. COS: PIC was educated on proper cooling and used recommendations given by inspector. Corrected On-Site. New Violation. 17C Violation of Code: [511-6-1.07(5)(a),(b)] Observed an accumulation of grease and dirt in hood fume ventilation system above grill and fryers. All physical facilities shall be maintained in good repair. New Violation. Correct By: 06/17/2021
