Violation of Code: [511-6-1.04(6)(f)] Observed cheese sauce cups labeled keep refrigerated and ranch cups labeled keep refrigerated cold holding at 50 degrees Fahrenheit and 49 degrees Fahrenheit respectively. Time/temperature control for safety food shall be maintained at 41 degrees Fahrenheit or below. COS: PIC voluntarily discarded the cheese and ranch cups and decreased the temperature of the cold holding equipment to allow TCS foods to be held at or below 41 degrees Fahrenheit. Corrected On-Site. New Violation.
