Violation of Code: [511-6-1.05(2)(y),(z),(aa),(bb)] Ware washing machine wash temperature reaching a maximum of 90F on thermocouple after running machine several cycles/draining and filling. The temperature of the wash solution in spray-type warewashers that use chemicals to sanitize may not be less than 120ºF. PIC reported they will call machine's service provider and make them aware of issue- next routine service is scheduled for tomorrow. PIC will use the (3) compartment sink to manually wash, rinse and sanitize all equipment until the ware washer is repaired. Repeat Violation. 15B Violation of Code: [511-6-1.05(3)(h),(i)] Observed temperature Gauge not working during the wash cycle of the ware washing machine. Ensure the ware washing machine gauge can maintain a wash cycle water temperature of 120 Degrees Fahrenheit. Pic will also ensure the gauge is repaired by the Technician that will be contacted to service the machine. Repeat Violation. 17C Violation of Code: [511-6-1.07(5)(a),(b)] Observed damaged gasket on the door of the Mini Danby brand refrigeration unit at the self serve Buffet line. New Violation.
