Violation of Code: [511-6-1.04(6)(g)] Observed cut lettuce in the walk-in cooler with no date mark. PIC stated lettuce was prepared yesterday, 3/8/20. Refrigerated, ready-to-eat, time/temperature control for safety food prepared and held in a food establishment for more than 24 hours shall be clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded, when held at a temperature of 41°F (5°C) or below for a maximum of 7 days. The day of preparation shall be counted as Day 1. COS PIC voluntarily discarded lettuce during the inspection. Corrected On-Site. New Violation. 15A Violation of Code: [511-6-1.05(6)(a)] Observed walk-in cooler door gasket to be damaged. Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications. PIC to have gasket repaired. Repeat Violation. 15A Violation of Code: [511-6-1.05(6)(q)1&3] External temperature measuring device on warewashing machine read a maximum of 110 degrees Fahrenheit after several runs. Maximum registering thermometer placed inside warewashing machine registered 120 degrees Fahrenheit. Ambient air temperature, water pressure, and water temperature measuring devices shall be maintained in good repair and be accurate within the intended range of use. PIC to have warewashing machine thermometer replaced or recalibrated. New Violation. 15C Violation of Code: [511-6-1.05(7)(a)2,3] Observed accumulation of debris on and around equipment throughout the establishment. Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. PIC to deep clean establishment. New Violation.
