Inpection Notes

Violation of Code: [511-6-1.04(6)(f)] Observed hash browns which were prepared less than an hour prior hot holding at 125 degrees Fahrenheit. Observed wrapped sausage and eggs biscuits hot holding on the grill at 119 degrees Fahrenheit. Time/temperature control for safety food shall be maintained at 135°F (57°C) or above. COS: PIC voluntarily discarded the sausage and egg biscuits during the inspection. PIC removed the grate from under the hash browns in order to have the container in direct contact with the grill and reheated the hash browns to 165 degrees Fahrenheit for 15 seconds to then hot hold at 135 degrees Fahrenheit or above. Corrected On-Site. New Violation.
