Violation of Code: [511-6-1.04(4)(a)1,2,3,4(i)] Observed chef prepare curry soup for a customer and then proceeded to use her hands to place peanuts in the curry soup. (a) Preventing Contamination from Hands. 1. Food employees shall wash their hands as specified under DPH Rule 511-6-1-.03(5). 2. Except when washing fruits and vegetables or as specified under subsection (a)4, food employees shall not contact exposed, ready-to-eat food with their bare hands and shall use suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment. Note: Chef voluntarily discarded the curry and peanut soup during the inspection. New Violation . Corrected On-Site. New Violation. 2-2B Violation of Code: [511-6-1.03(5)(j)1&2] Observed personal open cup on prep table in kitchen, chef proceeded to quickly hide the cup as the inspector was entering the kitchen. 2. Employees shall consume food only in approved designated areas separate from food preparation and serving areas, equipment or utensil areas and food storage areas. However, drinking from a single service beverage cup with a secure lid and straw that is handled to prevent contamination of the employee’s hands, the container, exposed food, clean equipment, utensils and linens, unwrapped single-service and single-use articles will be allowed. Accumulation of food debris and residue along kitchen floors especially under equipment, hard to reach areas, and floor/wall junctures. Floors/walls/ceilings need deep cleaned and then kept maintained on a facility cleaning schedule where surfaces are cleaned frequently and thoroughly enough to preclude accumulations. New Violation.
