Violation of Code: [511-6-1.03(3)(c)] CFSM posted Chantelle Knuycky certification expired 4/15/19. COS: PIC posted CFSM Amber Heard certification expires 11/30/21. A CFSM who actively works in the kitchen is highly recommended. It is recommended Kitchen manager Hubert becomes a CFSM. Corrected On-Site. New Violation. 5-1B Violation of Code: [511-6-1.04(5)(h)] Observed canned beef chili at 67F that had not been reheated to 135F for hot holding. Commercially prepared TCS foods must be reheated to 135F for 15sec within 2 hours for hot holding. COS: PIC removed chili from bain marie and reheated on stove top to 135F. Corrected On-Site. New Violation. 8-2B Violation of Code: [511-6-1.07(6)(c)] Observed antimicrobial spray being stored in metal tray with in use liquor bottles. Toxic chemicals cannot be stored near or adjacent to food. COS: Employee removed the spray from the bar area. Corrected On-Site. New Violation. 8-2B Violation of Code: [511-6-1.07(6)(b)] Multiple bottles of sanitizer stored at bar area unlabeled. Working containers of chemicals must be labeled with their contents. COS: PIC labeled the spray bottles as sanitizer. Corrected On-Site. New Violation. 8-2B Violation of Code: [511-6-1.07(6)(c)] Observed chemicals including sanitizer and window cleaner stored hanging off of back bar handsink. This sink is to be kept clear and used for handwashing only at all times. COS: PIC moved chemicals to appropriate area in main kitchen. Corrected On-Site. New Violation. 15B Violation of Code: [511-6-1.05(6)(j)] Observed warewashing machine reaching a temperature of 117F. The minimum temperature stated on the machine is 120F. PIC to have warewashing machine serviced to ensure it can provide water at least 120F. New Violation.
