Violation of Code: [511-6-1.04(6)(d)] Observed densely packed pasta in a container with a tightly sealed lid in the reach-in cooler at 45-47 degrees Fahrenheit which according to the PIC had been cooling since the day before (Thursday 12/26/19). Cooked time/temperature control for safety food shall be cooled: (i) Within 2 hours from 135°F (57°C) to 70°F (21°C); and (ii) Within a total of 6 hours from 135°F (57°C) to 41°F (5°C) or less. PIC voluntarily discarded the pasta during the inspection. Corrected On-Site. New Violation.
