Violation of Code: [511-6-1.03(3)(a)] Establishment unable to furnish certified food safety manager certificate. Food service establishments shall have in its employ a Certified Food Safety Manager (CFSM) as specified in paragraph (b) of this subsection to ensure food safety is being managed within the food service establishment during all hours of operation as specified within paragraph (d) of this subsection. The original CFSM certificate shall be posted in public view in each food service establishment. An additional copy shall be retained on file at the food service establishment at all times, and shall be made available for inspection by the Health Authority. Over the past 5 inspections, since the initial permitting inspection, the establishment has not shown evidence that a CFSM is employed. Evidence of enrollment in a CFSM course is required within 30 days. Repeat Violation.
2-1B Violation of Code: [511-6-1.03(5)(c)] Observed employee take payment from a customer then begin to reuse single-use gloves in order to prepare a ready to eat food. Food employees shall clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and: Before donning gloves to initiate a task that involves working with food. Inspector stopped employee, had her throw out previously used single-use gloves, wash her hands and don a new pair of single-use gloves before making a customer's ready to eat food. Corrected On-Site. New Violation.
2-2D Violation of Code: [511-6-1.07(3)(a)] Observed no hand soap at the front food service sink or the customer restroom sink. Each handwashing sink or group of two adjacent handwashing sinks shall be provided with a supply of hand cleaning liquid, powder, or bar soap. COS: PIC placed soap at each sink. Corrected On-Site. New Violation.
4-2B No sanitizer prepared in the establishment. Chlorine sanitizer must register between 50-100ppm in order to effectively sanitize food-contact surfaces. Inspector showed PIC how to make a chlorine solution with a concentration between 50 and 100ppm during the inspection. New Violation.
11D Violation of Code: [511-6-1.05(3)(g)] Establishment does not have thermometer available to check internal temperatures of potentially hazardous foods. Food temperature measuring devices shall be provided and readily accessible for use in ensuring attainment and maintenance of food temperatures as specified under DPH Rule 511-6-1-.04. PIC to provide food temperature measuring device. Repeat Violation.
