Violation of Code: [511-6-1.04(6)(e)] Observed ham cooling in a cooler with ambient temperature above 41 degrees Fahrenheit. Cooling shall be accomplished in accordance with the time and temperature criteria specified under DPH Rule 511-6-1-.04(6)(d) by using an effective method. PIC turned down cooler temperature to achieve proper cooling. Corrected On-Site. New Violation. 12B Violation of Code: [511-6-1.03(5)(g)] Observed employee actively involved in food preparation to be wearing a bracelet on her wrist. Except for a plain ring such as a wedding band food employees may not wear jewelry including medical information jewelry on their arms and hands while preparing food. PIC had employee remove bracelet immediately during the inspection. New Violation. 12C Violation of Code: [511-6-1.04(4)(m)] Observed sanitizer bucket where wiping cloths for counters was stored to have a concentration of quaternary ammonium between 0 and 100ppm. Cloths in-use for wiping counters and other equipment surfaces shall be: Held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n) COS: Sanitizer solution was remade to between 200ppm and 400ppm concentration.
