Violation of Code: [511-6-1.04(6)(h)] Observed container of cooked boneless wings in makeline cooler and reach-in cooler with 9/25 preparation dates. Ready-to-eat TCS foods must be discarded within seven (7) days of preparation with the day that the food is prepared counting as day one (1). COS- PIC voluntarily discarded foods. Corrected On-Site. New Violation. 6-2 Violation of Code: [511-6-1.04(6)(g)] Observed individually portioned Yum Yum Sauce containers prepared more than 24 hours ago stored in front reach-in cooler. Ready-to-eat TCS foods kept over 24hrs must be date marked to indicate a date of preparation for disposition to ensure foods are not kept for more than 7 days. COS- PIC able to verify food was prepared on Monday and retro-dated Yum Yum Sauce to 9/30 prep date. Corrected On-Site. New Violation.
