Violation of Code: [511-6-1.04(4)(c)1(i)(ii)(iii)(v)(vi)(vii)(viii)] Observed Raw Chicken stored above Raw Beef and cheese in the reach in cooler. Also observed Raw chicken stored on the shelf next to beef in the reach in cooler. Foods shall be protected from cross contamination by separating types of raw foods from each other such as beef, fish, lamb, pork, and poultry during storage , preparation, holding and display. Note PIC separated the food items based on their minimum cooking temperatures Raw chicken stored on the bottom shelf then ground beef on the next shelf. Then raw beef and Raw fish on the next self. Ready to eat cheese was then stored on the top shelf. New Violation. Corrected On-Site. New Violation. 6-1A Violation of Code: [511-6-1.04(6)(f)] Observed Mozzarella Cheese and Pork cold holding at temperatures greater than 41 Degrees Fahrenheit. TCS Foods shall be maintained at 41 Degrees Fahrenheit or below or 135 Degrees Fahrenheit or above. PIC voluntarily discarded Mozzarella cheese and pork during the inspection. New Violation.
