Violation of Code: [511-6-1.05(6)(n)] Observed dish washer with a final rinse cycle Chlorine concentration of 0ppm when tested with a chemical test kit. A Chemical sanitizer used in a sanitizing solution for a manual or mechanical operation at contact times specified under subsection (8)(b)3 of this rule shall meet the requirement specified in DPH Rule. 511-6-1-.07(6)(g). PIC immediately set up a manual wash, rinse and sanitize operation at the (3) compartment sink with Quaternary Ammonium sanitizer which had a concentration of between 150 - 400ppm during the inspection. New Violation. 6-1D Violation of Code: [511-6-1.04(6)(i)] Observed shredded Cheddar Cheese being held using Time as a Public Health Control with an sticker indicating product should be discarded at 12:36pm still on the line. Food being held using Time as a Public Health Control shall be discarded within (4) hours from the point in time when the food is removed from temperature control. PIC immediately discarded the shredded Cheddar cheese during the inspection. New Violation. Corrected On-Site. New Violation.
